I know it’s a little late for Valentine’s day treat posts, but what the heck, they were rather tasty and a must share for all the ‘amateur’ bakers out there looking for Valentines Day no bake recipe treats for a quick and easy surprise!
Although I would love to sit here and say I could win the next British bakeoff, the truth of the matter is I haven’t got as much baking experience as I’d like. I’m a major foodie and one of my ‘must do more of’s’ this year is definitely baking.
When it came to Valentine’s day edibles, I wanted to create simple, cheap and speedy cakes. At the moment I don’t own all the utensils I need to throw myself into a serious ‘baking’ challenge, so I decided to find easy no-bake desserts involving oreos, marshmallows, rice crispies, milkybar and some good old sprinkles!
No-Bake Oreo Bars
I spotted these yummy treats on Picky Palate and they looked easy peasy. I decided to give them a try with my very own added touch – star-shaped sprinkles and vegetarian marshmallows.
Ingredient for one batch:
- 1 large bag of marshmallows – approximately 5 cups ( I opted for gelatine free of course)
- 24 Oreos
- 5 tablespoons of butter
Using either a food processor or a large bag and a rolling pin, ground oreos until crumbly – but not fully grounded.
Line a 8-inch baking dish with foil, ready for the mixture.
Empty the bag of marshmallows ready for melting, either in a microwavable bowl or a large pan on the hob.
Add the butter and stir and melt until the marshmallows are puffy.
Stir in the crushed oreos – beware the mixture can get very sticky!
Transfer the mixture into the baking dish and spread out.
Leave to set for 10-15 minutes, add sprinkles (optional.)
Cut and enjoy! <3
Milky bar Rice Krispie cakes
Rice Krispies cakes evoke a nostalgic feeling inside. Along with cornflake cakes, they were my favourite as a youngster and so continuing my no bake easy recipe theme, I decided these had to be included.
Ingredients for 12 cakes:
- 75g Rice Krispies
- 150g Milky Bar or white chocolate brand of your choice
- 40g mini marshmallows
- Optional sprinkles, edible hearts or additional toppings
- 12 cupcake cases
In a bowl add the Rice Krispies, mini marshmallows and sprinkles and give it a good mix.
Break the white chocolate into pieces and melt (I put a bowl over a pan of hot water on the hob) using whichever method suits you.
Once the chocolate has melted pour in the Rice Krispie mixture, mix together and transfer evenly into the cases.
Refrigerate for 1 hour (lick the bowl whilst you wait)
And there we have it. Simple, scrummy and relatively cheap.
I do need to spend more time in the kitchen in 2016 and purchase the essential baking equipment I currently lack so I can perfect my cake baking skills, so look out for this as I plan to document both the highs and lows – soggy cakes!
